Filo Prawn Nibbles
Ingredients
12 large raw Mediterranean prawns, fresh or defrosted, peeled - 1 small onion, finely chopped
- 1 clove garlic, crushed
- 1 x 15ml spoon (1 tablespoon) fresh chopped chives
- 1 x 5ml spoon (1 teaspoon) fresh root ginger, grated
- 1 x 5ml spoon (1 teaspoon) chilli sauce
- dash lime or lemon juice
- 3 sheets fresh filo pastry sheets
- oil, for frying
extra chives, for garnish

Method:
Preheat the oil to 200°C/400°F
Place the onion, garlic, chives, ginger, chilli sauce and lime or lemon juice into a blender. Puree for 1 minute.
Lay the pastry onto a board and cut each sheet into 4 lengthways.
Brush each strip with the chilli mixture and place a prawn on top, exposing the tail. Wrap the filo around each prawn.
Deep fry for 2 minutes until the pastry is crisp and golden. Garnish with chives tied around prawn if desired.
Serve with a selection of dips.
