Filo Prawn Nibbles


Ingredients

12 large raw Mediterranean prawns, fresh or defrosted, peeled
1 small onion, finely chopped
1 clove garlic, crushed
1 x 15ml spoon (1 tablespoon) fresh chopped chives
1 x 5ml spoon (1 teaspoon) fresh root ginger, grated
1 x 5ml spoon (1 teaspoon) chilli sauce
dash lime or lemon juice
3 sheets fresh filo pastry sheets
oil, for frying

extra chives, for garnish

Filo Prawns Nibbles Fish Recipe from Sheil Bros Fresh Fish SuppliesMethod:

Preheat the oil to 200°C/400°F

Place the onion, garlic, chives, ginger, chilli sauce and lime or lemon juice into a blender. Puree for 1 minute.

Lay the pastry onto a board and cut each sheet into 4 lengthways.

Brush each strip with the chilli mixture and place a prawn on top, exposing the tail. Wrap the filo around each prawn.

Deep fry for 2 minutes until the pastry is crisp and golden. Garnish with chives tied around prawn if desired.

Serve with a selection of dips.
